Light Meals / Appetisers

Chicken livers and onions gently sauted in butter, garlic and brandy. This pate is seasoned with salt, freshly ground black pepper, mace and cloves and is silky smooth. (Minimum 500 gram block) -
Seasoned sausage meat with celery, carrots, onion, Worcestershire sauce, tomato sauce, breadcrumbs and egg. The light filling is then rolled in puff pastry and oven baked. (Makes 6 rolls) -

Main Course
Beef

Slow cooked beef in a rich beef stock with onions, mushrooms and herbs. Seasoned flour dumplings are added and cooked in all the flavours. (Minimum 4 – 5 serves) -
Soft and juicy meatballs seasoned with all spice, nutmeg, onion, garlic, salt and pepper. The meatballs are browned and cooked in a traditional Swedish creamy sauce that is full of flavour. (Minimum 4 – 5 serves) -
Slow cooked beef in a red wine, tomato and beef stock. With the addition of penne pasta, celery, carrots, onions and mushrooms a ragout is a meal in itself. (Minimum 4 – 5 serves) -
Beef mince mixed with onion, garlic, BBQ sauce, Worcestershire sauce, egg, salt and pepper. The rissoles are browned and served with a rich and tasty red wine, onion and rosemary gravy. (Minimum 4 – 6 serves) -

Chicken

Seasoned whole chicken pieces gently browned then topped with mushrooms, fried onions and red and green capsicum. The casserole is then oven slow cooked in a red wine, chicken and tomato stock. (Minimum 4 – 6 serves) -
This classic Italian chicken dish is baked in a rustic tomato and white wine sauce with red and yellow capsicums and kalamata olives. Enjoy your cacciatore served with your choice of pasta. (Minimum 4 serves) -
Chicken thighs flavoured with seeded mustard, Dijon mustard, honey, soy sauce and ginger. Oven baked and best served with fresh seasonal vegetables and or salad. (Minimum 5 serves) -
This favourite uses tenderised and seasoned chicken breast fillets which are hand crumbed. The schnitzels are pan fried to golden brown then topped with Napoli sauce and grated cheese before finishing under the grill to melt and colour the cheese. (Minimum 4 serves) -

Lamb

This hearty slow cooked lamb dish combines bacon, onions, garlic, thyme, mushrooms, potatoes and carrots in a rich red wine and beef stock. This casserole can be served with the usual lamb sides like mashed potato and peas. (Minimum 4 – 6 serves) -

Tinned salmon combined with mash potato, spring onions, lemon and salt and pepper. The patties are pan fried and can be served with just about any sides. (Minimum 4 serves) -
Canned tuna or salmon seasoned with garlic, onion, paprika and lemon. The tuna or salmon is combined with penne pasta, spinach and a white sauce topped with cheese and oven baked. (Minimum 4 – 6 serves) -

Vegetarian

This dish has grated zucchini combined with onion, cheese, eggs, flour and salt and pepper. The zucchini slice is topped with fresh sliced tomatoes, oven baked and can be seved hot or cold. (Minimum 6 serves) -
This lasagna combines capsicum, zucchini and carrots all sautéed golden brown. The sautéed vegetables are layered with fresh lasagna sheets, fresh spinach and a rich tomato and ricotta sauce. (Minimum 4 – 6 serves) -
